Ne Fais Pas Sans Blanc

A slightly different approach for this release saw Sylvain combine two different vintages of Chardonnay, half from 2022 which was aged for one year in barrique and half from the 2023 vintage aged in stainless steel. He then blended the Chardonnay with his 2023 Sauvignon Blanc. The mixture of warm and cooler vintages and the different textures brought from ageing in oak and stainless steel has resulted in a perfectly poised wine where its tension and complexity never overpower the fresh, bright fruit notes, making for an effortlessly charming bottle.
